Why grams and cups don't convert directly
A cup measures volume; a gram measures weight. How many grams fit in a cup depends on the ingredient's density: a cup of flour weighs about 125 g, a cup of sugar 200 g and a cup of honey 339 g. That is why a conversion needs the ingredient.
Common conversions (1 US cup)
| Ingredient | Grams |
|---|---|
| All-purpose flour | 125 |
| Granulated sugar | 200 |
| Brown sugar, packed | 220 |
| Butter | 227 |
| Milk | 244 |
| Water | 237 |
| Rolled oats | 81 |
Worked examples
- 250 g of flour is 2 cups (32 tablespoons).
- 1½ cups of sugar is 300 g.
Measuring flour
The gram weights assume flour is spooned into the cup and levelled. Scooping straight from the bag packs it down and can add a quarter more flour, which is the most common reason baked goods turn out dry. A kitchen scale avoids the problem.
The cup here is the US customary cup (236.6 mL). Metric cups in Australia and Canada hold 250 mL, so their gram weights are about 6% higher.
How this works
The page uses a reference weight per US cup for each ingredient, from the USDA FoodData Central household measures. Grams are divided by that weight to get cups, or cups multiplied by it to get grams. Tablespoons are cups times 16 and ounces are grams divided by 28.35. Everything runs in your browser.
Frequently asked
How many grams are in a cup of flour?
About 125 g of all-purpose flour, spooned and levelled.
How many grams are in a cup of sugar?
About 200 g of granulated sugar.
How many grams of butter are in a cup?
227 g, which is two US sticks.
Why do recipes give different numbers?
Measuring technique and the cup size vary; weighing with a scale is most reliable.
